When it comes to breakfast time, I used to refuse to eat anything because I just couldn’t stomach it at an early time in the morning, but now I am always craving pancakes for breakfast. Normal pancakes aren’t that great for you but I managed to find a gluten and dairy free recipe. I found this recipe on Amelia Liana’s blog. It has now become a tradition that we have pancakes once a week, oops -I have a serious addiction to these pancakes.
2 Cups Gluten Free flour, 1 TSP Vanilla Extract, 1 1/2 Cups Unsweetened Almond Milk, 5 Tablespoons Olive Oil, 1 TSP Baking Powder, 4 Eggs, 1 TSP Coconut Oil.
I put all of the ingredients into large mixing bowl together and get a whisk and mix it all until it looks smooth and every things mixed in. It doesn’t take that long to make at all. (Don’t add the coconut oil though, thats what you cook the pancakes in.
